I’m a Cover Girl!!!

Just a quick post tonight to show you what I found in my mailbox today:

The April 2011 issue of Scrap & Stamp Arts and my Tea Party project is on the COVER! Woohoo! What a surprise 😀

On a completely unrelated subject today is “National Pancake Day” so I decided that I would make breakfast for supper and I whipped up these Tofu and Fruit Parfaits…they were NOT a hit but they sure were pretty 🙂

 

Actually I think they were quite tasty, Here is the recipe, I make it up myself, I hope you like them and if not, well, I’ll be the first to admit I’m not a great cook (no cooking required tho, just a blender!)

1 block of tofu (any kind is fine but silken will work best)

soymilk

1 tablespoon vanilla

sugar (or your preferred sweetener)

a dash of salt

frozen berries (I used Maine Wild Blueberries and Strawberries)

Break up tofu and put it in the blender, add a bit of soymilk (Like 1/4 cup) and blend on high, add more soymilk until it whips up nice and creamy. Add vanilla, sugar (to taste, a couple of tablespoons) and a dash of salt and blend until it is smooth and creamy. thaw the berries in the microwave and add sweetener to taste (do this after heating so you don’t cook off the sugar). Layer the tofu blend and fruit in a pretty glass and enjoy!

I’m not sure why the kids did not like them, maybe they filled up on too many pancakes. These would make a great breakfast because they are loaded with protein.
